1702 - Yummy black-eyed pea goodness

For lunch, I made up a yummy black-eyed pea dish, and it even didn't provoke complaints from vakkotaur about allegedly stinking up the kitchen:

1 pound little smokies, any variety, precooked
1/2 small onion
1 can black-eyed peas

Cut up little smokies into approximate quarters. Chop onion. Brown sausages and onion over medium heat until onion is limp. Add black eyed peas, including juice from can. Season to taste (I used a fairly generous does of Tabasco). Simmer over low heat for at least 30 minutes.

We had this with cornbread muffins. Did I mention it was yummy?

There was one bad whiff while it was cooking, but the overall result managed to be the dilution solution to pollution. It looked like a course hash to me. It'd be interesting to try it with diced potatoes instead of the black-eyed peas, and maybe a bit more onion but chopped a bit more.
